Well, I am now officially under the 200 pound mark.  Wow.  I was looking at the card and realized I have been dancing around it for about 10 weeks.  Finally there.  Now, if I can keep the trend going.  Still looking at ending up at around 170.

While I was out and about today, I stopped by the Men’s Wearhouse just to price black suits.  (For some odd reason, Karen thinks I look good in black.)  The gentleman who helped me before (8 months ago) remembered my name, what size I wore (or used to wear), how long ago I was in, where we moved from, etc.  Pretty impressive.  Anyway, it turns out that not only do I have a 36” waist now, my suit size has dropped from a 46R to a 44R.  It’s nice to know that the diet is working.

We were real worried that the weekend of food debauchery was going to take its toll at the scale today.  At the worst, I expected to have gained a pound or two.  Imagine my shock when the scale lady says: “Down 5.4 from last week”.  Wow!  The Taco Bell on the way home Monday didn’t do me in!

So far I’ve lost a total of 11 pounds.  Ha ha, Karen, I’m ahead of you!

If you have read the previous few posts, you might get the idea that I am obsessed with food.  While it is true that diets tend to make one more food-conscious, I have managed to come across and make some meals that are pretty tasty and healthy at the same time.  It is an interesting part of my day, coming up with something to make for dinner that we will like, will be healthy and won’t kill us for points.  I use a program called NutriBase that can take a food or recipe and give me all the gory details of nutritional analysis.  For instance, the beef/broccoli menu.  I can put the recipe in the system, determine what my serving size is (1 cup, in this case), and it will tell me everything I need to know to determine how many “points” it is worth, using my official Weight Watchers Points-Finder slide-rule gadget.  I can maneuver ingredient amounts around in order to minimize calories and fat. 

The reason I am putting this stuff on here is simply so I can share these recipes with everyone who would be interested.  If I didn’t like what I made, it won’t be posted.  I’ve made my share of blech meals, and some of them I wouldn’t wish on my worst enemy (well almost wouldn’t). 

I hope some of these will find their way into your kitchens.  As Tony the Tiger says….They’re Great!

Potato pancake recipe April 3, 2006

I wanted pancakes for breakfast this morning. I sat down at the computer to figure out how many points a pancake was. If I use Bisquick, it's about 5 each. If I make homemade pancakes, it's about 4. Add the required butter and syrup, and breakfast takes up the whole day's points. Phooey.

So…I decided to do something different. I made mashed potato pancakes, and they turned out excellent. Karen liked them too. Weight Watchers points: 3 per cake.

  • 1 1/2 cups mashed potatoes
  • 1 scrambled egg
  • 2 oz finely diced ham
  • 2 green onions, finely sliced
  • 1 oz shredded cheddar cheese

Prepare mashed potatoes (either instant or real potatoes work fine. I used instant, but I was also in a hurry). Mix remaining ingredients with the warm potatoes until cheese is melted and mixed well. Split 4 ways and shape into patties about 1/2" thick. Spray skillet with non-stick spray and cook potatos patties over medium heat until brown on each side. If you lightly spray the spatula, it wil be easier to turn them over and remove from the skillet. Enjoy!

Wow! 4 weeks of Weight Watchers and I’ve managed to lose 8 pounds! After last weekend, I was sure this week would be a lost cause (no pun intended). Who knows, maybe I’ll be able to get down to 170 pounds after all.
